Knives Maintenance Instructions:

  • Hand wash the knives in warm water and dry them well with a soft towel after each use.
  • Store knives in a dry place protected from moisture.
  • Do not wash knives in the dishwasher; only clean them by hand to prevent blunting of the blade.

Instructions for proper sharpening with a sharpening file:

  • Hold the knife in your hand with the point down and the blade angled at about a 20 degree angle to the file.
  • Make sure the blade fits snugly on the file and apply slight pressure as you pull the knife up and down from the base of the blade to the tip.
  • Maintain a constant angle between the blade and the file, sharpening both sides of the blade at the same time.
  • Continue until you have made about 5-10 passes on each side of the blade.
